Recipes from the Canadian Rocky Mountain Caravan 2015


Buffalo Chicken Dip,   from Ann Hall

8 oz. cream cheese
1/2 cup Texas Pete Buffalo Wing Sauce (use more to spice it up if desired)
1/2 cup ranch dressing
1 clove garlic, crushed
2-3 boneless chicken breast, cooked and shredded
8 oz. cheese, cheddar, grated

Mix all ingredients together.  Bake 375 degrees, 20 minutes (longer if needed)
Serve with chips, fancy bread, etc.

Servings: 12

1 can pinto beans, rinsed and drained
1 can pork ad beans, slightly drained
1 can cut green beans, drained
1 can kidney beans, rinsed & drained
3 pieces thick-sliced bacon, diced
1 medium onion, chapped
1 medium green pepper, chopped
3/4 cup brown sugar
1 bottle chili sauce

Heat oven to 350 degrees.  Brown bacon and remove from skillet.  Add the onion and saute until tender.  Combine all ingredients in a 2-quart casserole dish and bake uncovered for 1 hour.
